What do I know really. If his method turns out great beer, that’s all that matters. Two things I’d point out. First, his boil appeared to last only 15 minutes. This may be enough to sanitize the wort, but I don’t think it’s enough to fully bitter the beer. I usually boil for 60 minutes adding aroma hops in the final 7 to 10 minutes. (Note that he mistakenly calls this dry-hopping. Real dry hopping is when you add hops to the fermenter without boiling).

The second thing that I would point out is that using a two-stage fermentation process is usually better. But he doesn’t mention it at all.
